Here are
recipes for seven popular classic cocktails and , for the
teetotalers (and designated drivers) in the crowd, four festive
"mocktails."

Mock champagne cocktail
Virgin strawberry daiquiri

Martini
There are probably more
variations of this cocktail than any other. For the record,
martinis are made with gin and very little dry vermouth. For
traditionalists, vodka is not an option.
- 3 ounces (2 jiggers) gin
- 2 to 3 drops dry vermouth
- 1 lemon twist or 1
pimiento-stuffed olive for garnish.
Fill a cocktail shaker halfway with
ice. Add the vermouth and gin, shake well, and strain it into a
cocktail glass. Garnish the martini with the lemon twist or the
olive.

Manhattan
- 2 1/2 ounces blended whiskey
- 3/4 ounces sweet vermouth
- Dash Angostura bitters
- Maraschino cherry
Combine the whiskey, vermouth, dash
of bitters and ice cubes in a shaker half-filled with ice and
shake well. Strain into a cocktail glass. Garnish with the cherry.

Tom
Collins
- 1 1/2 tablespoons fresh lemon
juice
- 1 1/2 teaspoons superfine
sugar
- 1 1/2 ounces (1 jigger) gin
- Club soda or seltzer water
- 1 lemon slice for garnish
In a Collins glass, stir the lemon
juice and the sugar until the sugar is dissolved, add the gin and
enough ice cubes to fill the glass, then stir well. Top it off
with the club soda or the seltzer water, stir again and garnish
with a lemon slice.

Pimm's
cup British
hot weather favorite. They like it without ice. We like it with.
- 2 ounces Pimm's No. 1
- 3 ounces ginger ale or
Seven-Up
- Cucumber slice
- Lemon slice
Pour Pimm's into a Collins glass and
fill with ice. Top with chilled ginger ale or Seven-Up; garnish
with slice of lemon and a slice of cucumber.

Gin
and tonic
- 2 ounces gin
- 3 ounces tonic water
- Lime slice
Pour tonic over ice in a highball
glass. Add gin, stir and serve with a lime slice for garnish.

Mint
julep Not
just for Derby Day, these Southern favorites are often served in a
frosted glass or mug.
- Crushed ice
- 4 sprigs fresh mint
- 1 teaspoon superfine sugar
- 3 ounces bourbon
Fill a Collins glass with crushed
ice. In another small glass, muddle the leaves from two mint
sprigs with the sugar and a dash of club soda or water. Add
bourbon, stir and strain into the Collins glass. Stir again with a
long-handled spoon. Garnish with the remaining mint.

Seabreeze
- 2 ounces vodka
- 2 ounces grapefruit juice
- 1 ounce cranberry juice
Stir vodka and juices with ice;
strain into a highball
glass filled with ice.

Mock
champagne cocktail
- 7 ounces lemon-lime carbonated
beverage, chilled
- 1/2 cup apple juice, chilled
- Lemon slice
Just before serving, mix the
carbonated beverage and apple juice. Serve in a champagne flute
garnished with a lemon slice.

Virgin
strawberry daiquiri
- 3 ounces frozen strawberries
in syrup
- 1 ounce fresh lime juice
- 1 teaspoon sugar
- 1 strawberry
- 1 orange slice
Place lime juice, strawberries and
sugar in a blender and frapp‚. Pour into a chilled Margarita
glass. Garnish with the strawberry and orange slice.

Mockarita
- 1 ounce nonalcoholic triple
sec
- 1 ounce fresh-squeezed orange
juice
- 1 ounce sour mix
- 1 ounce fresh-squeezed lime
juice or dash of Rose's lime juice
- 1 ounce Seven-Up
Shake with cracked ice and strain
into large salted Margarita glass.

Rumless
rickey
- 1 ounce lime juice
- Dash of grenadine
- Dash of bitters
- Club soda
Shake with ice and strain into an
old-fashioned glass. Garnish with twist of lime. |
