Steamed
Chicken & Vegetables

Ingredients
:
2 chicken breasts
1/4 cup diced onions
1/4 cup carrot
1/4 cup capsicum
1/4 cup green peas
1 clove garlic crushed
1 splash white wine/soy sauce
Salt, pepper, chilli flakes and herbs for seasoning

Procedure
:
1.
Heat oven to about 180 degree
centigrade.
2. Place chicken on a piece of foil big enough to enclose meat
& vegetables.
3. Sprinkle vegetables on top of meat, dust with seasonings and
splash over the wine.
4. Enclose the meat in the foil, seal tightly and bake on an oven
tray for about 50 min or until meat is cooked, and juices run
clear.
5. Serve with a baked potato that you can cook with the chicken.

Granny
Smith's Traditional Apple Crumble

Ingredients : |
4
large Granny Smith apples, peeled and cored.
1 tablespoon sugar.
1/2 teaspoon mixed spice.
1 cup rolled oats.
1/2 cup processed oat bran or multi-bran cereal.
1/2 cup brown sugar.
1 teaspoon cinnamon.
60g butter.
1/2 cup slivered almonds.
2 tablespoon sunflower seeds.

Method
:

1.
Slice apples and place into a greased ovenproof dish. Combine
sugar and mixed spice and mix into apples.
2. In a food processor, combine oats, bran cereal,
brown sugar, cinnamon and butter. Process until mixed to a
crumble.
3. Add almonds and sunflower seeds and mix well.
Sprinkle crumble topping over apples, pressing mixture lightly
together.
4. Bake in a moderate oven (1800C)
for 30 minutes.
5. Serve hot with thick yoghurt or ice cream (Serves
4). |
