Ingredients:
- 1 kg bandeng (milkfish)
- 1 lime
- 4 garlic cloves
- 1 thumb-sized piece of turmeric
- 1 thumb-sized piece of ginger
- 1 tsp coriander
- Salt to taste
- Flavor enhancer (optional)
- 1 tsp mushroom stock powder
How to Make It:
1. Clean the fish and remove the insides, but leave the scales.
2. Rinse again with lime juice to reduce the fishy smell.
3. Blend garlic, turmeric, ginger, and coriander into a paste. Add mushroom stock and flavor enhancer.
4. Rub the spice paste all over the fish.
5. Place the fish in a pressure cooker. If stacking, use banana leaves in between to prevent sticking.
6. Cook in the pressure cooker for about 1 hour, depending on the size of the fish.
7. Let the steam release fully before opening the pot.
8. Before frying, coat the fish with egg so it doesn’t fall apart.
