During wheat fasting in Navratri festival, some of the ingredients which contain nutrition for you would be skipped during the fasting period. For a filling and nutritious meal, you can try out this pumpkin spinach sabudana. This soup is quite filling, gives nourishment and satiety at the same time.

Ingredients:

  • 1 cup cubed pumpkin
  • 1 cup spinach leaves
  • 1/2 cup sabudana soaked overnight and drained
  • 2 tablespoon roasted peeled peanuts
  • 1/2 tsp Jeera
  • 10 curry leaves
  • 1 bay leaf
  • 1 tsp ghee
  • salt and pepper to taste

Method:
1. Make pumpkin spinach puree by boiling in 2-3 cups of water. Cool and blend.
2. Heat ghee in a pan add jeera, chopped curry leaves and bay leaf

3. Add sabudana
4. Saute on a medium flame for few minutes
5. Add roasted peanuts


6. Add puree of pumpkin spinach


7. Cook further
8. Add salt and pepper as per taste

Note: Pumpkin can be replaced with sweet potatoes
