Recipe: Cashew Sour Cream with Vegetable WedgesOne of my favorite snacks is chopped up raw veggies with dips.
This healthy little dip recipe is actually made from real cashew nuts…AND it tastes 10 times better than dairy sour cream.

Here is the Cashew Sour Cream recipe :

  • 1 Cup raw cashews (soaked overnight in water and rinsed thoroughly)
  • The juice of 2 lemons
  • The juice of 1 lime
  • 2 cups of water

Throw everything into your blender and blend to a smooth consistency – chill for 20 minutes. Serve with your favourite raw vegies or on top of a bean salad with some tomato salsa. The kids will love it too!
