Orange Coffee Cake by Meera Joseph

Orange Coffee Cake brings together two wonderfully complementary flavours. Try it in this tried and tested recipe from Meera Josephs’s kitchen.

Ingredients

150 grams all-purpose flour

150 grams caster sugar

1 teaspoon salt

2 ¼ teaspoons baking soda

150 grams butter

2 large eggs

2 teaspoons instant coffee powder

1 teaspoon ground cinnamon

50 grams plain chocolate (grate the choc)

1 orange(rind & 3 tablespoons juice for cake)

1 orange(rind & juice for topping)

Method

  • Preheat the oven to 325°F/170°C
  • Cream butter and sugar until light and fluffy
  • Add eggs one at a time and beat well
  • Grate orange and add to the above mixture
  • Mix 3 tbsp orange juice and coffee powder
  • Sieve well flour, salt, baking powder and cinnamon
  • Add to the above mixture, alternating with flour and orange-coffee juice
  • Fold in the grated chocolate
  • Bake in a greased and floured fluted pan for about 45 minutes

Orange sauce topping

1 cup fresh orange juice

1 orange zest/rind

1 tablespoon butter

  • Stir and beat all ingredients and pour over cake
